Equipment

  • Plastic storage bag
  • Mallet for pounding
  • Toothpicks
  • BBQ Grill
  • Meat thermometer

Ingredients

  • 1 large chicken breast
  • 4 slices Black Forest ham prosciutto may be used as a substitute
  • 1 cup chopped frozen spinach water squeezed out by hand
  • 1/4 cup Grated Parmesan Cheese
  • 1 oz Swiss Cheese 2 large slices
  • 4 slices bacon

Instructions

  • Place the chicken breast inside a plastic storage bag that has been cut open on all but one side. Pound the breast until very thin.
  • Squeeze the chopped spinach to remove any excess water.
  • Open the bag and place the Black Forest ham on the chicken breast.
  • Top the ham with the spinach and parmesan blend, followed by slices of Swiss cheese.
  • Lift the bag to help roll the chicken breast up neatly.
  • Cut the rolled breast into 4 equal pieces.
  • Wrap each piece with a slice of bacon and secure with toothpicks to hold them together.
  • Cook on the BBQ over medium heat for about 5 minutes, then flip and cook for another 3 minutes or until the internal temperature reaches 160°F (71°C).

Notes

I recommend putting the grill lid down when you flip them; they will cook faster and more evenly. Slow cooking ensures the cheese melts without oozing out too much. A squeeze of lemon before serving is a nice touch.
