German Plum Cake Kuchen
This is a nice recipe that exposes the slices of plums.
A Sponge cake texture and the hint of lemon gives a nice balance to the sweetness.

Step 1

Assemble your ingredients
I used here a 10 inch glass baking dish. If you use a smaller dish use less of the batter,
or the plums will sink too deep when baked and not be exposed.
Step 2

Cream the butter well, add the eggs and blend.
Then add the sugar and blend.
Then add the Flour a little at a time, then the lemon juice, vanilla and blend.
(don’t over mix)
Step 3

Butter the pan and sprinkle flour in it to make a non stick surface.
Pour in the batter, but make sure it is only about 1/2 inch high with batter.
Too much batter will rise high and cover the fruit.
Step 4

Ready for Fruit.
Here is a close up of how the batter should look consistency wise.
I put about 1/2 inch of batter into the pan.
If your pan is smaller than 10 1/ 2 inch then, put less batter in,
or your plums will be totally covered up as the batter rises.
Step 5

Just lay the plums on top of the batter.
If the plums are not sweet you can sprinkle sugar on top and cinnamon.
Step 6

Bake for 40 to 50 minutes in an 350 degree oven until a toothpick comes out clean.
This worked well the fruit looks like it is snuggled into the batter.
I have baked some that I thought would be ok, or I just wanted to use all the batter,
but the fruit gets covered completely.

Here is an alternate way to do it, in a square pan.

Sprinkle with powdered sugar

Final Thoughts
You can use any kind of fruit you want for this recipe. Here I used apples, but it could be pears, peaches, or any fruit that won’t get buried.

- 1 stick of butter 125 grams
- 3 eggs
- 3/ 4 – 1 cup 100 grams sugar, depending on how sweet you like it.
- 1 cup plus 2 tablespoons AP flour 200 grams
- 2 teaspoons baking powder
- Lemon juice from 1 lemon 1/4 cup
- 1 teaspoon vanilla
- 6- 8 Plums depending on size sliced and
- optional for topping:
- Cinnamon
- Sugar
- Garnish:
- Powdered sugar
Instructions
- Pre heat oven to 350 degrees F
- Assemble your ingredients.
- I use a glass round or square baking dish, 10 inch spring form pan. If you only have a smaller one then
- I would use less batter or the plum slices will be covered. Check to see how sweet your plums are.
- They may need to sweeten in a bowl with a little sugar sprinkled on them.
- Cream the butter well, add the eggs and blend.
- Add the sugar and blend well.
- Add the lemon juice and blend.
- Add the vanilla and blend, then add the flour and baking powder and mix
- for a minute till well blended. Do not overmix.
- Slice the plums. If the plums are not sweet enough
- you may want to sugar the slices in a bowl and let them sweeten for 15 min or so,
- So you may want to do this ahead of time.
- Butter the pan and sprinkle flour in it to make a non stick surface.
- I put about 1/2 inch of batter into the pan.
- If your pan is smaller than 10 1/ 2 inch then, put less batter in, or your plums will cover.
- Lay the slices of plum on top.
- Bake for 40 to 50 minutes in an 350 degree oven until a toothpick comes out clean
- Dust with powdered sugar and a bit of cinnamon if you want.
