German Style Sweet and Sour Red Cabbage
It’s a new style of Roulade. Think chicken pinwheels wrapped in bacon. You start with chicken breast rolled like a Cordon Bleu and then slice it into 4 pieces and wrap it in bacon. Then you can grill nicely. Special thanks to Sabine Wörn for this fun recipe and interesting spin on Rouladen.

Prep
Step 1

Cut the cabbage the long way. Some folks like to chop it again the other way. I usually
give it one chop down the middle
Step 2

Chop the onions in 1/4 inch dice.
Step 3

Chop the apples.
Step 4

Get your ingredients together. Here I used purple onions. It doesn’t matter.
Step 5

Combine ingredients in large pan or casserole.
Step 6

Simmer, bake or microwave until cabbage is tender. Stir occasionally.
Taste the cabbage some time during the process, and add vinegar or sugar to adjust the seasoning, if desired.
Step 7

Red Cabbage is traditionally served with German dishes like Sauerbraten or Rouladen,
but is good with almost any kind of meat.

- 1 Sauce Pan with Lid
- 1 Mandolin Optional
Ingredients
- 6 cups Red Cabbage Shredded
- 4 tablsp Onion medium dice
- 3 tblsp Brown Sugar
- 1/3 cup Red Wine Vinegar You may substitute another vinegar
- 1/3 cup red Wine
- 1 Apple Medium tart , medium dice or grated
- 1/2 teasp Ground Cloves

Cooking;
- Combine ingredients in large pan or casserole.
- Bring the cabbage to a simmer. Cover and cook for 20-30 min. till the cabbage, onions and apples start to break down and it blends together. it will be a bit thicker. You can also bake or microwave this dish until cabbage, onions and apples are tender. Stir occasionally.Taste the cabbage some time during the process, and add vinegar or sugar to adjust the seasoning, if desired.

Final Thoughts
These Rouladen are also a perfect accompaniment to a mixed grill. They play nicely with others.
Slow cooking gets the chicken done and the cheese inside melted but not so much that the cheese starts to ooze out.
And then, you are ready to serve. They are good as is, maybe a squeeze of lemon if you prefer.
